1. Preheat your oven to 350°F (175°C).
2. Cook the ground turkey in a pan until fully cooked. Drain excess fat.
3. In a large mixing bowl, combine the cooked turkey, black beans, corn, shredded cheese, enchilada sauce, cumin, and salt. Stir until well mixed.
4. Cut the tops off the bell peppers and remove the seeds. Stuff each bell pepper with the turkey and bean mixture.
5. Place the stuffed peppers in a baking dish. Cover with foil and bake for 1 hour.
6. After 1 hour, remove the foil and top the peppers with additional shredded cheese. Bake for another 5 minutes or until the cheese is melted and bubbly.
7. Remove from the oven and let them cool for a few minutes before serving.
